This International Chef’s Day, Taj Cidade de Goa celebrated Goa’s culinary heritage – the home chefs whose recipes and techniques have been passed down through generations. In honour of the day, the resort launched a special initiative to bring its team together with local home cooks to exchange stories, flavours and age-old wisdom from Goan kitchens.


Through these Home Chef Interactions, Taj Cidade de Goa aims to preserve and revive authentic regional cuisine by engaging directly with the community. These collaborations uncover forgotten recipes, traditional spice blends, and local cooking practices that have long defined Goan dining. 


CULINARY EXCHANGES


Guilhermina Fernandes brought creativity to every dish, with pepper as her signature spice for its aroma and versatility. Succorina C Fernandes exemplified authentic coastal flavours through Samarichi Kodi, and Sharmila Fernandes with her signature Xacuti showcased the depth and heritage of Goan cooking.


As kitchens around the world honour professional chefs on International Chef’s day, Taj Cidade de Goa extended that celebration to include the unsung culinary storytellers of Goa – the home chefs who keep its authentic flavours alive. 


By blending professional expertise with local wisdom, the resort ensures that Goan cuisine continues to evolve while staying true to its roots – a perfect tribute to the spirit of International Chef’s Day through a menu for the day at BLD, the resorts multicuisine restaurant.
